The vineyards for Domaine de Paris have been in the Brun family since 1900, situated in Gonfaron and Pignans, at the botton of the Maures hills. The soil is clay-like, chalky Permian origin, with sandy and alluvium soils. Situated on a total area of 35 hectares, the vines for this exceptional Côtes de Provence Rosé are now around 30 years old. Juice is cold stablised for 20 days prior to fermentation at around 18°C, followed by lees ageing to round out the palate. Brilliant pale pink in colour, with a floral and powdery red fruited nose. The palate is fine and elegant, with dominant red fruit flavours and excellent length and freshness.
SUSTAINABILITY.
Planted on very dry slopes in the Jean Giono region of Provence, the vines for Lou Paraïs are farmed with environmental sustainability at front of mind, with vinification processes kept straightforward to promote both the terroir and typicity of the appellation. Grapes are harvested at night, with cooled fruit directly pressed to tank, cold settled, and fermented at a controlled temperature of 15-17°C with select yeasts. Typical of the appellation, the rosé is pale pink in colour, exhibiting a floral nose with muscat-like aromas. The palate is dominated by fresh red fruit flavours and a thread of savoury acidity.
