Emmalene winemaker and viticulturist – Mark Bulman and Tim Bartsch – fell in love with the bright, easy-drinking, food-friendly styles of white wine poured all over northern Spain and Portugal during their travels across the Iberian Peninsula.
But never found something to match it back home.
“We had a chat about a year ago about how refreshing and enjoyable these spritzed white wines of the region are,” says Mark.

“They sit in the same space as a beer or G&T, but are somehow more refreshing than both – and go so much better with food.”
“We struggled to find the style in Australia, despite it suiting our food and lifestyle so well. After a quick chat, we knew we had to make a new wine.”
Enter Kooli: a lightly spritzed, dry white wine, inspired by the easy-drinking Txakoli and Vinho Verde wines of Spain and Portugal. It's the wine for long lunches, shared plates and afternoons that somehow become dinner.
Kooli is available to order nationally via Saint Wine now.
